I had to come up with a catchy title to make you want to read this post. And you do want to read this because somewhere in this post is the recipe for a Killer Lasagna.
Jode's Green Chili Lasagna, to be precise.
The overwhelming anticipation of the first day of Mother's Day Out was nearly too much for McClaine to handle. So he slept with his new lunch bag last night.
I snuck in this morning and peeled it from his little hands, snuck down and packed his and Avery's lunch. By the time I got dressed and returned to the kitchen the lunch bag was gone. He had carried it back upstairs, climbed with it into Reece's crib and was sitting next to her eating one of the chocolate cookies that he and Avery had made the night before.

Here they are for the first day of school.
When I picked them up, McClaine showed me all of his artwork and said his day was great.
Avery declared that she did NOT want to go back to that school because there was a girl that was kissin' boys and she did NOT think that was a good idea.
We threw a birthday party for Uncle Jon tonight and it was good times. Leigh made a really cute banner from funky fabric, Oma made a really awesome deer cake, and I made Green Chili Lasagna.
I called the deer cake "road kill cake" because I needed a way to get your attention Jon has spent hundreds of hours in the deer stand and he never sees deer... so we thought it would be funny to make him a cake with "x" eyes.
You know Caleb's grandma has had some success with hunting deer (and she really has), because as soon as she walked in the house she checked out that rack made of Little Debbie Nutty Bars and announced that it was a 16 point! Now Oma makes a great cake- so it sure didn't taste like road kill.
And here you go friends... you're gonna want to save a copy of this and make it. It's delish.

Jode's Green Chili Lasagna

8 oz lasagna noodles (I use the ready to bake noodles that don't require boiling first)
1 cup Parmesan Cheese
Meat Sauce:
1 1/2 pounds ground beef, cooked and drained
Add and simmer-
2 (8 oz) cans tomato sauce
1 can Rotel
1 Tbs. sugar
1 Tbs. black pepper
1 Tbs. garlic salt
Cheese Sauce (mix until creamy and smooth):
1 1/2 cups small curd cottage cheese
4 oz softened cream cheese
1/2 cup sour cream
1 large can diced green chilis
1/2 cup chopped green onions
Assembly:
Layer in Pyrex- meat sauce, noodles, cheese sauce, meat sauce, noodles, remaining cheese sauce, noodles, meat sauce.
Top with a heavy layer of Parmesan cheese.
Cover with foil and refrigerate overnight.
Cook in a 350 degree oven for 45 minutes, remove foil and bake additional 10 minutes.
Allow to cool for 15-30 minutes.

Oh my gosh-your kids are just the cutest!!! I SO wish that I knew them personally! :) Or that they were students at this crazy school of ridiculousness that I've gotten myself involved in out here in California!
