I didn’t want the cukes from the garden to feel left out of the week of packing. So I packed ‘em up.
In the midst of laundry and stuffing clothes, changes of clothes, sheets, towels and the like into suitcases, this big ol’ pile of cucumbers was looking to be pickled. It was my first shot at pickling and it was pretty interesting. At one point in time, I was filling jars with brine, guarding children from entering the kitchen, helping Audrey master the potty chair and saving Reecey from trying to escape the highchair. It was a pretty spicy situation!
My goal is to have the suitcases packed by tomorrow, so Caleb can pack the car on Saturday while I spend the day baking cookies, making Saltine Toffee Candy and Texas Trash. Generations have enjoyed homemade cookies on the porches at Camp Meeting, and I am resolved to spare my generation our usual fare of Easy Cheese and Oreos.
On Sunday we will take off on a six hundred mile trip to the beautiful Ft. Davis Mountains, where there will not be a laptop or TV in sight! See you next week with plenty of pictures.

Your pickles look great. I should try that, but I am just not all that fond of pickles. We have so many cucumbers, though, that I wish I did like pickles. Have a fun and safe trip ~ can't wait to see pictures!
